I'm not vegetarian, but I really enjoy a lot of veggie food, so I thought I'd share my four favourite, mega-easy recipes on here.
Jack Monroe's aubergine and kale satay
This doesn't need the lemon juice, plus I like to use fresh chili and a whole tin of coconut milk (leftover coconut milk is an annoying thing to have hanging about) and extra peanut butter to thicken it up. Serve with rice - delicious!
Quorn and mushroom pasta
I borrowed this recipe from the canteen at a place I worked a few jobs back. Cook some pasta. Cook up a ridiculous amount of mushrooms, plus chili if you like it, plus any other veg you want to use up (tonight I threw in some stray kale), plus quorn pieces. Add a tin of tomatoes, season, let it simmer a bit. When serving, smother it in grated cheese.
Gnocchi bake
Cook up onion and aubergine with chili (sensing a theme here?) and a bit of tomato puree. Cook some gnocchi. Mix together in an oven dish and cover with mozzarella. Bake until the mozzarella has melted. If you don't like aubergine, peppers and courgette work well too, plus you could add a tin of tomatoes instead of the puree (I just like it to have a slightly dryer consistency.)
Cheat's Thai curry
This is a good one for using up any random veg you have in the fridge. I like to use some of the massive bag of dried seaweed I have hanging about, plus peppers, broccoli and whatever else. Cook it up with with good Thai curry paste (I use Mae Ploy), throw in a can of coconut milk and let it simmer. If you can get the type of tofu that's already been deep fried and is all fluffy, it's delicious to throw that in too. Serve with rice.
