I don't even know what to call it. Vaguely Thai-inspired, I guess ...
We had four half-frozen chicken breasts, which I simmered in a sauce made from a can of coconut milk, a couple of tablespoons of Thai red curry paste, and about a cup of peanut butter (some chunky, some smooth) with about 2 cloves of garlic and a tablespoon of fresh ginger (I get the kind that comes in a jar all mooshed up) and some fish sauce. It is probably better to mix this all up before you put the chicken in. I was making it up as I went, so I didn't. Meanwhile, soften/cook some pad thai rice noodles and slice/chop veggies - we used mushrooms, zucchini, and yellow squash. When the chicken is done, take it out of the pot and put the veggies and noodles in to cook. Shred the chicken and return it to the pot, with some fresh cilantro if you're so inclined (we always are). When the veggies are cooked, serve with chopped peanuts for garnish. I totally want more of this, like, right now, and we just finished eating.
Work has been SO INSANE lately; we are still understaffed, and my department in particular (where there's me and, oh, wait, me) has been having to stay late. So I go in at 9 a.m. and leave around 7 p.m., five days a week, and if you are any good at math you can see how that means I'm getting a) lots of overtime and 2) freaking exhausted. But there's a dim light at the end of the tunnel; by May 11 we should have one other person trained for working nights (if I don't kill her first) and after that I will get another person in my office (who I will have to train but WHATEVER) so that just occasionally I can go home at 5:30. _o_ <= too tired for Paul Gross arms
