Date Pinwheels2 1/3 cups all purpose flour
1/2 tsp baking powder
1/4 tsp baking soda
1/4 tsp cinnamon
1/4 tsp salt
1/2 cup butter, room temperature
1 cup packed brown sugar
2 large eggs
1/2 tsp vanilla extract
Filling
1 1/2 dates, pitted and chopped fine
1/3 cup water
1/3 cup sugar
1/2 walnuts, chopped fine
1/2 tsp vanilla extract
Combine the flour, baking powder, baking soda, cinnamon and salt.
In a large bowl or stand mixer, cream the butter and brown sugar. Beat in the eggs and vanilla. Gradually blend in the dry ingredients. Cover and chill for 4 hours.
To make the filling, combine the dates, water and sugar in a saucepan and bring to a boil. Reduce heat and cook, stirring, until very thick. Remove from heat and stir in walnuts and vanilla. Let cool to room temperature.
On a floured surface, or between two sheets of parchment paper, roll out the dough to 1/4 inch thickness. Spread the date filling evenly over the dough, leaving a 1/4 inch boarder all around the edges. Starting on the long side, roll up the dough jelly-roll fashion, and pinch the seam to seal. Cut the roll in half, wrap in plastic wrap, and chill overnight.
Preheat the oven to 350F. Cover the baking sheets with parchment paper.
Cut the rolls into 1/4 inch slices and place 2 inches apart on the baking sheet.
Bake for 8-10 minutes until lightly colored. Transfer to racks to cool.
