Another Cocoa Waffle Sunday
Jan. 22nd, 2012 07:59 am Snowy weekend, a new waffle iron, and a full pantry. Whatever am I going to do with myself?
Cocoa Cherry Waffles
2 cups AP flour
1/2 cup sugar
4 tsp baking powder
1/2 cup dutched cocoa
1 tps espresso powder
1/2 tsp salt
2 large eggs, separated
1 1/2 cups milk, warmed a bit
1/4 cup melted butter
1 tsp vanilla extract
1/2 cup finely chopped dried cherries
Preheat waffle iron and treat with cooking spray.
In large bowl, combine floor, baking powder, cocoa, espresso powder, and salt.
In another bowl, mix egg yolks, milk, melted butter and vanilla with a hand mixer until combined.
In a stand mixer, white the 2 egg whites until firm peaks form.
Add dry and wet ingredients together until just combined. Fold in the egg whites and the cherries.
I have a Belgian waffle maker that takes about 3/4 cup of batter at a time. Followed the directions to your own iron.
On mine, it takes about 6 minutes per waffle and made 4 very good waffles.
