Waffle New Year

So for Christmas I got a Belgian waffle maker (one of few kitchen gadgets I didn't already own). One of my neighbors had me over for dinner last night, so I had her over for breakfast this morning. First time ever making waffles and they came out great.
Sweet Potato Pecan Waffles
Ingredients
1 1/2 cups AP flour
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground nutmeg
1/2 teaspoon cinnamon
1/4 cup chopped pecans
1 cup canned sweet potato puree
1 tablespoon brown sugar
3 egg yolks
1 cup milk
3 egg whites
3 tablespoons butter, melted
Directions
Stir together flour, baking powder, sugar, salt, spices, and pecans.
In another bowl, mix sweet potato puree, brown sugar, egg yolks, and milk until well combined.
Add to flour mixture, and mix well.
Beat egg whites until stiff peaks form. Fold 1/4 of the egg whites into batter. Lightly fold remaining whites and melted butter into the batter.
If you are making Belgian waffles, add 3/4 cup of batter to a hot waffle iron for 5-6 minutes (use 1/2 cup and a little less time for regular waffles).
If you like your waffles extra crispy, transfer them to a warm (250° or so) for a couple of minutes.
