(Tied for) First Place Pie
Nov. 25th, 2008 08:56 amYes, yes, I baked TWO pies (what....pre-made pie shells come two per pack and I had extra pecans... and I am a sad and pathetic person). It tied for first place with an incredible country apple pie.
Dark Chocolate Espresso Pecan Pie
Ingredients
3.5 ounces dark chocolate
2 tablespoons butter, melted
1/2 cup brown sugar
3 large eggs
1 cup light corn syrup
1/2 teaspoon espresso powder (up it to 1 tsp if you really want a very strong coffee flavor)
1 tablespoon vanilla extract
1 1/2 cup pecan halves
1 nine-inch deep dish pie shell
Directions
Preheat the oven to 350°F.
Melt the chocolate in the microwave (careful not to burn it). In a large bowl, beat the chocolate, melted butter, brown sugar, and eggs together. Add the corn syrup, espresso powder, and vanilla. After the filling is well mixed, stir in the pecans. Pour the filling into the pie shell.
Bake for 50 minutes or until the pie tests done. Cool in the pan on a wire rack.
