Just Peachy
Jan. 13th, 2008 06:13 pmThe minute I heard about the upcoming Nor'Easter, out came the Crock Pot again. When I told Mom what I was making, she sighed, "More sweet stuff? Why don't you try and train your palate away from sweet?"

Yeah, right...
Peachy Keen Pork Chops
4-6 pork chops (choose thick ones with bones attached)
1 teaspoon salt
1 29 oz can of peaches in syrup, drained (save 1/4 cup of the syrup)
1/4 cup brown sugar
1/4 teaspoon ground cinnamon
1/4 teaspoon ground cloves
1 8 oz can of tomato sauce
1/4 cup cider vinegar
Sprinkle with salt, then brown the pork chops over medium high heat (about 3 minutes per side). Place the chops into the crock pot and cover with the peaches. In a bowl, combine the rest of the ingredients with the reserved peach syrup. Mix well, then pour over the chops. Cover and cook on low for 5-6 hours.
These came out really good. Sweet and tangy, and the bones simply fall away. I'm serving them with a wild rice blend and broccoli.
