Gluten free bannock

I started with these two recipes:
Plain
Larded

I used the first as my "savoury" base, and the second as my sweet base. I used mostly the President's Choice gluten free all purpose flour, though the last round I switched to Robin Hood's GF all purpose instead.

Round one:

This batch was done at the cabin, where we had an oven.

The plain bannock, done with chunks of Kawartha Lakes dairy chipotle cheddar crumbled in. Wrapped in parchment paper, then foil, and baked in an oven that was closer to 450F than it was supposed to be.




The sweet was done with blueberries, and the suggested 2 tbsp of sugar, in a baking dish that was greased and floured.. I used butter as the fat source, since I didn't have lard. I also sprinkled a layer of sugar over top.






The cheese bannock was good, though I didn't turn it while cooking, so one side was crisp and the other a little doughy. The sweet bannock was great. Crumbly, sweet and tasty, sort of like a dry scone.


Round two:

A second batch of plain bannock, no cheese this time, done on the BBQ. Used as a burger bun. A tad on the gummy side.

Round three:

This is where is gets good. Now we're cooking on the coals of a camp fire. Everything from here on is done in a cast iron sandwich press.

Basic method: take a large ziploc, fill with the dry ingredients. Close and shake. Open and add the water, then close and mash the bag to mix. Snip an end off the bag. Pipe onto a square of parchment paper. Wrap, then wrap a second time in aluminum foil. Place into a cast iron sandwich press, and put on the coals of a fire. Roast a bit, then turn. If you've cooked it right, when you open it, it should pop a bit. Trapping the steam made the camp fire bannock way fluffier and more breadlike, and the iron gave the outside a nice cripy crust and a regular shape.

I did several rounds of the plain bannock to use as bread/burger buns, and they were great.




The star, though, was the sweet bannock. We switched over to using lard, instead of butter, and added cinnamon with the sugar. The last batch, I also added 3 tbsp of sugar instead of 2. We also added various combinations of: pears, peaches, pecans, spicy chocolate, marshmallow, and orange rhubarb marmalade. The peach turned out the best, especially the next day. We put a sprinkle of cinnamon and sugar on the parchment before piping the batter on, and some more on top after squiching in the fillings.





Doing everything in the ziplocs meant that there was almost no mess to clean up - just foil and a zipoc to toss, plus the measuring cup and spoon.

Camping sites?

neeuqdrazil and I are thinking about going camping on the weekend of July 17/18. Any suggestions on where good places to go are? We went to Rockwood last year, and while it was nice, we feel like we pretty much did everythign to do there last time. We also ended up having the flodo lights from the bathrooms pointing at our camp site, so our spot was overly well lit for camping.

Today has been unloading and returning the van, and dealing with the gross cooler. There was supposed to have been hauling gear back to the Den of Decadence, but mycrazyhair was having an allergic reaction, so I gave her benedryl. When it kicked in, she mostly passed out and is sleeping in the living room.

Then I sat down, clearly a mistake, and here we are. The Internet is supposed to be bringing me food soon. Then I'll feed mycrazyhair and pour her into a car full of stuff and take her home.

I am trying to pretend I don't have to go to work tomorrow.

Also, I just realised that I have no nail polish remover.

Looking at how much of the space is being taken up by food, we may need to forcefeed people to make sure we can bring tormenta home!

I'm told the site is pretty full already; tormenta apparently got us the last space capable of holding 6 people, when one takes into account the palace and gazebo I'm bringing.

Happy discoveries;

Kaleidoscope

So, who do I know who's going to Kaleidoscope? I'm trying to figure out where mycrazyhair, tormenta and I are going to set up. I think the Obstacle Course is a little too busy for my tastes, so I think we're trying to find some other people to share a clearing with.

This year, I will not be bringing the Big Orange Canvas Tent. But I will be bringing the gazebo.

I am back at work after my trip to the woods.

Woods were good. It rained every couple hours, and it was colder than forecast. There were mosquitos everywhere. My reaction to mosquito bites is still pretty mild; I have some spots, but very little itching or swelling. Black flies, horse flies and deer flies were kept away by the cold and rain. Despite all this, I still had fun.

I am now on yaycation!

The purple pride hair is long gone. I dyed over it with black. This looked... terrible. I shaved the beard off except for the long patch under my lip, and it now looks better, but still suboptimal. I miss my beard already with its fuzziness and chin-enhancing properties. I also wish I had dyed that patch of hair that is left down there. It looks weird being mostly blond with the black hair.

I am now pretty much ready for camping! Plans have changed, so instead of a leisurely morning with me needing to be ready to go for 10 tomorrow, I now need to be up at Yorkdale for 6:45 am. So I need to get up *earlier* than usual! The reasons for this make sense, so I am not upset, just somewhat startled. (wait! I forgot about bananas, chocolate and chili! Those shouldn't go until tomorrow, but I had forgotten about them, I write this to remind myself tomorrow.) I also still need to make trail mix. pez_minotaur will be by soon to pick up 95% of my gear.

Shit! Just realised that my plans to do laundry tomorrow morning to free up the remaining items of clothing I want to take will not work. Time to go violate the operating hours on the building's laundry room. See you all Monday.

Change of plans

Winter camping has been cancelled due to the complete and utter lack of winter - it was decided that spending 3 days in a yurt near Port Elgin when it's 5 C and raining would kind of suck, so it's off.

This does mean, however, that I'm going to drag my ass to Dark Rave Saturday night for as much fun as my semi-broken body can handle.

Since neeuqdrazil made plans for Friday night on the assumption that I'd be out, I am looking for something to do out of the house. Suggestions?
