Norwegian Christmas Butter Squares

1 cup unsalted butter, softened (2 sticks)

1 egg
1 cup sugar (6 oz, brown)
2 cups flour (8 oz, oat BRM)
1 tsp vanilla 1/4 t allspice, 1/3 t cardamom
½ tsp salt
Turbinado/ Raw Sugar for dusting

Goofed up and put flour in before mixing the wet ingredients, removed.
Cream wet, mix in oat flour.
Press into 8x8 lined with parchment paper
Bake 12 min @ 400°
Overbaked for an unknown period of time due to oven going mute.

Macaroons

2 eggs
14 oz (1 bag) sweetened coconut
1 t almond extract
dash salt

Beat whites until stiff but not dry. Fold in coconut.
Beat yolks until light and fluffy, fold in.
Bake 350 for 20 mins.

Needs more egg - try four eggs and maybe a smidge of sugar. omnomnom says use sweetened condensed milk, but that's so much sugar.

*Spices*
- (1/2 heaping tsp) mustard
- (1/2 heaping tsp) cumin
- dash cloves
- 1/4 t black pepper
- 1 bay leaf
- Spoonful (1 tsp) kashmiri pepper
- Spoonful (1 tsp) ground turmeric
- Sprinkle ground garam masala
- lots of ghee

*Aromatics*
- small onion, diced small
- 1 t garlic
- 1-inch piece of ginger, grated
- 1/2 t salt

*Sauce Base*
- 2x2x1/3" tomato paste
- 1 lb ground beef (85%)(or lamb)
- Water
- Spritz of lemon juice
- 1 lb Frozen Peas
- Sprinkle of salt

Onion, ginger, garlic, spices, tomato paste & water.
Transfer out of the wok, add watered beef.
10-15 mins to cook meat through.
Add peas, kill heat.
dash lemon juice and garam masala, serve.

Try over diced and fried potatoes, or include potato with meat.

A Salad

~3qt volunteer red sail lettuce, cut into strips and rinsed
4-5 oz shrimp
.5 c raisins, soaked
1 T cider vinegar
2-3T mayo

Shell the shrimp, pour boiling water over, count 60s, drain. Section shrimp if they're big.
Drain raisins.
Mix vinegar and mayo, adjust as needed.
Drain and spin the outdoor lettuce.
Mix, let stand for ~30 mins to chill. Eat.

8large garlic cloves, smashed and finely chopped ~8 T of minced garlic juice

1 teaspoon red-pepper flakes, plus more to taste 2 t siracha
2 teaspoons finely grated lime zest and 2 tablespoons juice (from 2 limes), plus more lime wedges for serving
1 cup tamari or low-sodium soy sauce (see Tip)
1 cup honey

1/2 c each soy sauce and honey
1 tablespoon toasted sesame oil
Cooked rice, noodles or lettuce cups, for serving
Toasted sesame seeds, sliced scallions and chopped cilantro, for topping

Marinate for ?? hours, put into pressure cooker for 70 mins, NPR, shred pork and reduce the liquid to a sauce.
