Frog Eyes Salad

This old time favorite is delicious as a salad or dessert. The recipe uses a tiny round pasta called Acine di' Pepe (like orzo, but round) which gives it an interesting texture similar to tapioca.


1/2 cup sugar
1 tablespoon all-purpose flour
1/4 teaspoon salt
1 (8-ounce) can crushed pineapple, undrained
1 (20-ounce) can pineapple chunks in its own juice, undrained
2 (11-ounce) cans mandarin orange segments, drained
1 egg, beaten
2 teaspoons lemon juice
1 1/3 cups (8 ounces)Acine di Pepe Pasta, uncooked
3 1/2 cups (8 ounces) frozen non-dairy whipped topping, thawed and divided
3 cups miniature marshmallows
1/2 cup flaked coconut
Maraschino cherries (optional)


1. In medium saucepan, stir together sugar, flour and salt.
2. Drain pineapple, reserving juice to equal 1 cup. With whisk, gradually stir juice and egg into sugar mixture. Cook over medium heat, stirring frequently, until mixture comes to a boil. Stir in lemon juice. Cool mixture to room temperature.
3. Meanwhile, cook pasta according to package directions; drain. Rinse with cold water to cool quickly; drain well.
4. In large bowl, stir together pineapple juice mixture and pasta. Cover; refrigerate several hours or overnight.
5. Add crushed pineapple and chunks, oranges, 2 cups whipped topping, marshmallows and coconut; mix gently and thoroughly. Cover; refrigerate until cold.
6. Top with remaining whipped topping; garnish with cherries, if desired.

Makes 12 servings.

Butterscotch Peanut clusters

Butterscotch Peanut clusters
1 - 3 Oz. box butterscotch cook and serve pudding.
1 - Cup brown sugar
1 - Tbsp butter or margarine
1 - Cup evaporated milk
1 - Cup salted peanuts
1 - vanilla

Combine all the  ingredients except the peanuts
Stir over med heat till boiling. Then time for 3 minutes.
Stir continuously. Add peanuts and stir till it loses its gloss. spoon onto waxed paper and let dry. EAT!!!!

Window/Glass Cleaner

½ tsp liquid soap
3 tbs vinegar
2 cups water

Mix the 3 ingredients and put into a spray bottle (Save one you have purchased before). When cleaning glass, newspaper works better than paper towels and they are less expensive too!

SPANISH OMELET (Tortilla Espanola)

SPANISH TORTILLA


1 1/2 onions, diced
6-7 potatoes
Salt to taste
7 eggs
Olive oil

Peel and dice onions. Set aside in a bowl. Peel potatoes and cut into quarters. Slice potatoes very thinly and mix with the onions. Add salt to taste. Heat the olive oil and fry the potatoes and onions until soft.

Meanwhile, break and beat the eggs in a bowl. Drain the fried potato and egg mixture and add to the eggs. Mix well. Heat a small amount of oil in an 8-inch saute pan.

Pour about 1 inch of the mixture into the pan. Cook one side until eggs are set. Flip onto a plate to turn the tortilla over. Return to pan and cook other side until egg mixture is set. Remove onto a serving plate. May be eaten hot or cold. Yield 3 small (8 inch) tortillas.

COCA-COLA CAKE

2 c. cake flour
2 c. sugar
2 sticks butter
3 tbsp. cocoa
1 c. Coca Cola
2 eggs, beaten
1/2 c. buttermilk
1 tsp. soda
1 1/2 c. miniature marshmallows
1 tsp. vanilla

Combine cake flour and sugar. Heat butter, cocoa, and Coca Cola to a boil. Combine buttermilk, soda, marshmallows, and vanilla. Pour boiling Coke mixture over flour and sugar. Mix thoroughly. Add to eggs/buttermilk mixture and beat well. Bake in greased flat cake pan at 350 degrees for 30 to 35 minutes.

COLA FROSTING:

1 stick butter
3 tbsp. cocoa
6 tbsp. Coca Cola
1 lb. confectioners' sugar
1 c. chopped nuts
1 tsp. vanilla

Combine butter, cocoa, and Coca Cola and boil. Pour above boiled mixture over confectioners' sugar. Add chopped nuts, vanilla, and blend thoroughly. Spread over warm cake.
