One find beets with the greens still attached, that have appropriately snouty-looking roots, and finds something to make horns out of, and something for legs, and steams the beets whole, and makes little wildebeet sculptures for the dinner table. One of my hobbies is the art of the subtlety, or sotelty, which is sculptural food that's intended to be eaten (Charm City Bakery is doing it, but most sugar sculpters are not).
