Apricot Ginger cake
9 oz crystallized ginger (Cut into small pieces)
healthy dash of cinnamon
one 15.25 jar of Polaner all fruit Apricot
4 eggs separated
1/4 cup vegetable oil
1-1 1/2 cups self rising cake flour.
Heat oven to 350
Mix yolks, jam, oil and ginger then sift flour and cinnamon into yolk mixture and mix thoroughly and set aside. Take mixer and whip whites to stiff peaks, then fold very slowly into the yolk/flour mix. Put into 9X13 baking pan sprayed with PAM then bake until toothpick test shows clean. Yes, there is NO added sugar to this, you won't need it thanks to the ginger and the jam.
