As an anonymous reply to this post, I want you to ask me any questions you've been afraid to ask for whatever reason. That I'd be offended, angry, whatever. I won't know it was you. Irish Cream Custard Pops!

Ok, at the request of some folks on the QC feed, here is the recipe! Enjoy!




3 cups whole milk
1 cup heavy cream
6 egg yolks
3/4 cup sugar
Irish Cream

Place the milk and cream in a small, heavy saucepan or double boiler (this works best). Set the saucepan on the stovetop and bring to a scald over medium heat. Remove from the heat.

Whisk the egg yolks and sugar in a mixing bowl until pale yellow and well combined, about 2 minutes.

Using a ladle, temper the eggs by adding about 1/2 cup of the hot milk mixture to the eggs and whisk to combine. Add the egg mixture to the hot milk in the saucepan and stir well with a wooden spoon. Return the pan to medium heat and cook, stirring CONSTANTLY, until the mixture is slightly thickened and coats the back of a metal spoon, about 5-10 minutes. Do NOT overcook or cook too quickly or the eggs will curdle. You may use a candy thermometer; you want to shoot for 170 degrees.

Remove the custard from the heat and strain through a fine mesh strainer into a clean mixing bowl, pressing down on the strainer with a rubber spatula to get as much custard as possible into the bowl. Add Irish Cream to taste - I do about half a cup, plus some extra irish whiskey. Place bowl of custard in ice water and stir to cool quickly. Once it's cooled to a warm temperature, pour into popsicle molds. I do half straight custard, and the other half I do alternating layers of chocolate syrup and custard, and then "swirl" the syrup up through the custard with a knife or the popsicle stick. Freeze overnight.

The alcohol is obviously not cooked out of these, so these are NOT FOR CHILDREN. Unless you want to quiet them down. :D
