Harissa-dressed tomatoes with a lime ricotta

This simple salad from former Bubala executive chef Helen Graham combines the richness of fiery harissa with the sweetness of ripe, in-season tomatoes. It’s great served as a side, but equally delicious on toast for lunch.

Ingredients

  • 300g pack No.1 Red Choice Vine Tomatoes 
  • Few coriander leaves

For the harissa dressing

  • 1 tsp cumin seeds
  • 1 tbsp Cooks’ Ingredients Harissa Paste With Lemon
  • 1 tsp agave nectar or maple syrup 
  • ½ tbsp sherry vinegar
  • 1 clove/s garlic, finely chopped 
  • 2 tbsp olive oil
  • ½ tsp salt

For the lime ricotta

  • 250g tub ricotta
  • ¼ tsp salt

Method

  1. Toast the cumin seeds in a dry pan until aromatic, then lightly crush. Whisk all the dressing ingredients together in a large bowl until fully combined, then set aside.

  2. Add all the lime ricotta ingredients to a bowl (reserve some lime zest), then stir to combine.

  3. Cut the tomatoes into bitesized chunks. Add to the dressing and toss to combine.

  4. Smooth the lime ricotta onto a serving dish, top with the dressed tomatoes and garnish with lime zest and coriander leaves, then serve.

Cook’s tip

For the tastiest tomatoes, store them in a cool place out of direct sunlight, but not in the fridge, as this affects texture and flavour.
