Ingredients
- 300g pack No.1 Red Choice Vine Tomatoes
- Few coriander leaves
For the harissa dressing
- 1 tsp cumin seeds
- 1 tbsp Cooks’ Ingredients Harissa Paste With Lemon
- 1 tsp agave nectar or maple syrup
- ½ tbsp sherry vinegar
- 1 clove/s garlic, finely chopped
- 2 tbsp olive oil
- ½ tsp salt
For the lime ricotta
- 250g tub ricotta
- ¼ tsp salt
Method
Toast the cumin seeds in a dry pan until aromatic, then lightly crush. Whisk all the dressing ingredients together in a large bowl until fully combined, then set aside.
Add all the lime ricotta ingredients to a bowl (reserve some lime zest), then stir to combine.
Cut the tomatoes into bitesized chunks. Add to the dressing and toss to combine.
Smooth the lime ricotta onto a serving dish, top with the dressed tomatoes and garnish with lime zest and coriander leaves, then serve.
Cook’s tip
For the tastiest tomatoes, store them in a cool place out of direct sunlight, but not in the fridge, as this affects texture and flavour.
