there's something about characters who've been in a situation where they had to step up or take responsibility when they were really young/inexperienced (eg. being the last survivor of a massacre, having to find their way home after getting horribly lost, having to take care of someone even younger/more inexperienced than them). when they couldn't ask anyone what to do. when they had to figure out an imperfect solution on their own. bonus points if they fuck it up horribly.

It’s the fact that you’re gonna have to get up and just do it regardless of if you know how because the only alternative is dying. It’s the sudden weight of the world on your shoulders as you grapple with what just happened to you while also having to move forward. Opinions on Demon of Hatred as a fight? He's my favourite boss, or at least a strong contender for favourite.

I love Demon of Hatred so much and for so many reasons. While I wouldn't say he's my favourite boss fight, he's definitely up there.
A big part of that is honestly the lore behind the fight, for me. I knew of the fight before playing Sekiro, and while I didn't get spoiled on the lore surrounding it, I was able to piece together the hints before the fight, so I can't separate my enjoyment of the lore from the enjoyment of the fight.
A thing I love about the fight itself is that the difficulty of it is caused by how different it feels from a typical boss fight in Sekiro; while deflection is still important, you shouldn't be deflecting the fire attacks (due to chip damage and burn buildup).
You have to learn the tells and patterns to know what you should deflect and what you should space out (or attempt to iframe through). Outside of NG+, you are more likely to get a deathblow through depleting the health bar than breaking his posture. Speaking as someone who loves both games, it feels more like a Dark Souls fight than a Sekiro fight, but it's still exceptionally fun. It would feel ordinary in Elden Ring or Dark Souls, but it's the only boss fight with its specific feel in Sekiro, making it stand out and feel incredibly memorable, which makes sense considering the lore - it should be memorable!
Also, the Malcontent upgrade for the Finger Whistle stunning the boss is so good. This is a fate the Sculptor tried so hard to avoid. He doesn't want to become this, he doesn't want to be this, but he can't stop it himself. And yet that familiar sound reminds him of who he is, and for a moment he isn't a victim of this all consuming rage and is able to stop himself. It doesn't last, but it is still a moment of control over himself at a time he lacks that.
The music is also really good. It feels very dissonant with itself, but in an intentional way, driving the lore of it across. It's an unavoidable, tragic fate, something the Sculptor desperately tried to avoid and yet succumbed to.
All this to say I love the fight. I love how unique it is, and how it doesn't feel like a Sekiro fight, while still remaining fun. The difficulty is caused by that, but it doesn't feel unfair; all of the attacks are approachable and have a predictable pattern that balances out how different it is (and how you can't just iframe through the attacks). And then there's the lore.
