If I understand correctly gloo.gatewayProxies.gatewayProxy.logLevel helm value is useless. It sets LOG_LEVEL environment variable in gateway-proxy deployment which does not change envoy's log level. gloo. gatewayProxies.gatewayProxy.envoyLogLevel is what changes the level.
