To assess the feasibility of the two-step emulsification the resulting emulsion in the static mixer was further dispersed using the
colloid mill IKA MK 2000 and dispersant IKA Ultra-TURRAX UTL (the number of rotor revolutions in both cases was 7848 [min.sup.-1]).
Features of the cream suite include: Mixing turbine with counter-rotating side sweep; recirculation with in-line homogenizer and in-line
colloid mill options; steam and chilled water options; a vacuum-charging system; bottom-to-bottom transfers; low-pressure manufacture; calibrated load cells and display systems; side vessels piped directly into vessels with capabilities of 160, 350 and 1,400 liters; clean-in-place systems; and discharge into 1,000 kilograms food-grade pallecons or 200-liter poly-lined drums for transfer to filling lines.
The resulting pre-emulsion is pulled out from the tank by a Waukesha Cherry-Burrell Universal II pump and on through to a
colloid mill before finally entering the filler.
Blocks of cheese were cut into chunks with a knife, broken into pieces by hand, and placed into a
colloid mill, which sheared the mixture into a paste.

This may be affected by grinding coarse particles in the presence of a liquid in a
colloid mill.
A
colloid mill will have a high shearing action but typically lower throughput than high- or medium shear dispersing units.
