For vacuum frying temperatures (108[degrees]C, 118[degrees]C, and 128[degrees]C) investigated, rate constants obtained were 0.2655, 0.3121, and 0.2807 [min.sup.-1] while for atmospherically fried samples (fresh and predried) the values of 0.1062, 0.3004, and 0.2967 [min.sup.-1] and 0.1003, 0.0936, and 0.0972 [min.sup.-1] were obtained at 160[degrees]C, 170[degrees]C, and 180[degrees]C, respectively.
