So.  Inaugural entry? ^^;;  *looks around nervously*

Since I've gotten into cooking lately, I thought I'd share a healthy recipe I came across that got rave reviews from Mom when I made it.

Lemon-Rosemary Salmon
INGREDIENTS
1 or 2 Boneless (and preferably skinless) Salmon Fillets
4-5 Sprigs Fresh Rosemary
Olive Oil (app. 2-3 tablespoons)
Garlic Powder
Black Pepper
1-2 Thinly-Sliced Lemons

INSTRUCTIONS
1. Preheat oven to 400 degrees F (200 degrees C).

2.  Slice lemon(s).

2. Set salmon in a foil-lined pan/baking dish.  (Foil makes for easier cleanup.)

3.  Drizzle salmon with olive oil.  Sprinkle on garlic, take rosemary sprigs & break leaves off of stems.  Sprinkle on the loose fresh rosemary leaves as evenly as you can.  Sprinkle on black pepper and arrange lemon slices on top.

3. Cover with another sheet of foil (to keep the fish from drying out)  and bake 20 minutes in the preheated oven.  Add or subtract a few minutes as needed - whatever it takes for the fish to be fully cooked.

NOTE:  I've been deliberately imprecise with amounts, because I've assumed people will add more or less according to taste.

I usually serve this with plain steamed broccolli & carrots.
