This seems to only apply to FAT partitions, though, which are uncommon on *nix.

Yes, the tutorial applies to FAT filesystems. Testdisk itself should also work with filesystems which are more common on *nix, like Ext2 or Ext3. At least that's what the testdisk man page says. I didn't try it though. (@Aurelius Sorry for the late response btw.)
