The question as posed is too broad to be fully covered, so I went w/ giving them 2 of the larger reasons. As to the what I did cover that, by highlighting the methods one could use to see the differences in the various versions of a Red Hat based distro such as Fedora. Again too broad a topic to cover in a A on SE, but it's still a Q that comes up enough that I thought it warranted a rough outline of the reasons that there are different packaging options for a given distro such as Fedora in my example. | |

The less junk you install, the smaller the attack surface. Reason #4 (should be #2): defaults. An application run on a server usually needs very different tuning than the same application run on a desktop. But I believe the OP was asking about what, rather than why? | |
